Winemaker’s Notes: In the production and care of the grapes in the vineyard, organic products are used for both fertilization and phytosanitary treatments, and drip irrigation is employed, which is the most efficient way to use and conserve water. The grapes are transported on the same day as the harvest in containers whose shape is best suited to prevent compaction and damage. Only physical methods are used in the winemaking process. The destemming and pressing system is carried out in a way that does not damage or tear the solid components (stems, skins, and seeds) of the grape bunch. Fermentation is carried out with selected yeasts obtained through traditional selection and propagation methods. To achieve clarity, modern physical processes that respect the wine’s natural character are used, such as centrifugation and tangential flow filtration, all in a protected environment with entirely natural nitrogen that we produce ourselves.
